From the unique terroir of Holy Mount Athos, «Kormilitsa» meaning «Purveyor», signifies a vineyard of great importance. Metochi Chromitsa surrounds the Holy Monastery of St. Panteleimon on Mt Athos, at an altitude of 250 m above sea level. This exceptional monastic product is produced on sandy-clay soil and subsoil with sufficient moisture.
Kormitsa Red, with limited production from the organic vineyards of the metochi, has been certified as the official wine of the Kremlin. The wine is served to official guests in Moscow, Kremlin, Russia, who are usually leaders of foreign states.
Enjoy this artfully balanced blend of organic Cabernet Sauvignon and Limnio, while savoring the aromatic nose of spices and currants and the rich textured tannins on a smooth chocolate background. Deep purple color, intense, with ruby highlights. Aromatic character of small dark fruits, spices and vanilla. Herbal aromas that give complexity to the background. Dry on the pallet with well-structured tannins, full-bodied and complex tasty palette that is dominated by the fruit and the sweet spices. Unique and long aftertaste.
The grapes are picked early in the morning in order to avoid high temperatures. The selected bunches are placed in wooden tanks (5 tons) for agitation and homogenizing. There is no use of yeasts nor auxiliaries. The fermentation is slow (10 days) during which “piégeage” is implemented aiming at the extraction of phenolic components. The two varieties are vinificated separately; the process is perfectly adjusted to the profile of each variety. The temperature is steady at 24°C. After fermentation the juice stays in contact with the grape skins (time depending on the variety) while the temperature is set free. Skin separation, malolactic fermentation in oak barrels or wooden tanks.
Barrels: 225Lt, French oak from selected top manufacturers, 1st and 2nd fill
Ageing period: the wine stays in French (Allier) new oak (first fill) and American wooden barrels for 8 months and continues to evolve its character in the bottle. During maturation period, the wine is homogenized twice.
Alcohol content: 13,5%. Best served at: 18-20 °C as an ideal pair for grilled or fried fish, white meats, mild yellow cheeses and fruits. Mount Athos Protected geographical indication (PGI) from grapes of organic farming.
