The monks of the Xenophontos Monastery collect it carefully and make wonderful pickle of it.

• Sea fennel can be used in all kinds of salads. It can be combined beautifully with tomato and boiled potato.
• Serve with plenty of olive oil.
• It also makes an ideal “meze” for raki, ouzo or tsikoudia.
• The leaves of sea fennel are rich in vitamin C and contain carbohydrates (sucrose, glucose), organic acids (malic acid, quinic acid), phenolic compound (chlorogenic acid, which has antioxidant action).
• The pickled sea fennel is one of the finest monastery products.
